imperfect boiling, parboiling, scalding, simmering, opp. ἕψησις, Arist. Mete. 381a12, al.; ἀπεψία τις ἡ μ. ἐστι Id. GA 776a8; of rapidly growing cereals, ὥσπερ τὰ ἐπὶ τὸ ζέον ἐμβαλλόμενα τῶν ἑψομένων, οὐδεμίαν . . οὐδὲ κἀκεῖνα λαμβάνει μ., i.e. they ‘cook’ too suddenly, without ‘simmering’, Thphr. CP 4.9.6. (Written μώλυσις and μώλυνσις in some codd. of Arist. Mete. 379a2, b14, 381a12, 22; μόλυνσις in nearly all codd. of Id. Mete. 381b14, GA l.c., Thphr. l.c.; cf. μωλύω.)
