There are hardly any good attestations of this purely scentific expression. Georgacas Glotta 6 (1958): 174 explains it as ‘the one that carries what is eaten’, from » οἴσειν and the common second member -φάγος. The formally much easier explanation as “oicoc-eater” (Stromberg 1944: … — [Beekes, s.v. οἰσοφάγος, p. 1112]

οἰσοφάγος : τι. «oœæsophage», orifice supérieur de l'estomac (Hp., Arist., Thphr., Gal), parfois écrit dans des textes tardifs εἰσωφάγος. Composé arbitraire créé par un médecin : le premier terme est le radical du futur οἴσω, le second celui de l'aoriste φαγεῖν. Sens : «qui transporte ce que l'on mange», cf. Viell. eig. „der transportiert und ißt‘“, von οἴσειν (s. d.) und dem sehr gewöhnlichen Hinterglied -pdyos. Daß genaue Vorbilder dieses rein wissenschaftlichen Ausdrucks fehlen, kann kaum überraschen.
